The Best Pesto In The World

...is, of course, the one my Mum makes at home!


She has been making pesto for a long time and with varying ingredients, and the other day, she gave me a jar of Basil pesto.
As far as I know, it also contains olive oil and pine nuts, as well as salt and pepper; if anyone wants the recipe, I am sure she'll be happy for me to post it.

Anyway, this pesto was so delicious I was very much tempted to eat it directly out of the jar with a spoon. Instead, I was being good and made myself a hot meal for a change (instead of my usual cheese sandwich for lunch); I still had some mushrooms left over from the weekend, and some pasta, so it all combined very nicely.


If you look closely, maybe you'll see the shape of the pasta - it's flowers and Hello Kitty heads :-D

Today, I am going to spend my lunch break at my parents', so I am guaranteed to have a delicious lunch, no matter what it is going to be!

    the ingredients you mentioned, are correct, you only forgot the garlic, which is rather important!! ;-)

  2. This looks so delicious. You did saute the mushrooms first didn't you? And the combination is one of my favorites; wish I had been there to join you in lunch.

    1. Jill, it was as delicious as it looks! I fried the mushrooms in a pan and then added the pasta (that had already been made before, it was leftovers).

  4. I make my own pesto too, Meike. It's the usual Italien recipe with basil, parmesan, pine nuts and olive oil. Beautiful. A friend who has just been staying has a plate of sliced tomatoes every morning with lots of pesto or basil and olive oil and toast.

    1. No garlic in yours, Graham? The dish sounds very nice, although I wouldn't add any more olive oil, and I definitely would not feel like it for breakfast :-)

    2. My actual ingredients are:

      * 2 tablespoons coarse-chopped walnuts or pine nuts
      * 2 garlic cloves, peeled
      * 3 tablespoons extra-virgin olive oil
      * 4 cups basil leaves (about 4 ounces)
      * 1/2 cup (2 ounces) grated fresh Parmesan cheese
      * 1/4 teaspoon salt

      I only use recipes as guides though so although this is my base I might alter it as I go along.

    3. When I was talking to my Mum about her pesto yesterday, she said that she can't really give exact measures, since she usually makes this "by feel", similar to you.

  5. Naturally! Mom's recipe is always the best.

    I feel the same way when I have dinner over at my parent's place. I never know what I am going to "get", but it is always good.

    1. You are right, Elizabeth! And often, I don't even attempt to make things exactly the way my Mum does them, because I won't get them right anyway. So it is always a special treat to have the original dish!
