Guest Post By My Mum: Easter Bunny Cookies

Nearly 8 months have passed since my Mum's last guest post on here. Last night, she offered to write another one, and here it is:

In a few days is Easter, so I baked today Easter-rabbit-shaped cookies. They are really easy to make, taste good and are very crisp.  I decided to post the recipe on Meike's blog, so you can surprise your family.



You  will need:

  • 200 g very soft butter
  • 300 g flour
  • 200 g ground almonds (alternative hazelnuts)
  • 250 g sugar
  • 1 whole egg
  • 1 egg yolk (but keep the egg white)
  • 2 tablespoons rum, if you don't want to use alcohol, use milk

For decoration:

  • some raisins (for the eyes)
  • coarse sugar 
  • coconut flakes
  • sliced almonds


Mix up all the ingredients (I use an electric mixer), until you get a dough ball. If it is too dry, add some milk. Then cover it and put it for at least 1 hour into the fridge, or over night, if you like.

Roll it out on a floured surface, about 4 mm thick, then cut out with a cookie cutter, rabbit-shape ore other. Set them on a greased baking tray or baking paper.


Beat the eggwhite and dab the cookies with it. Then decorate: 1 raisin as an eye, sprinkle the body with almond slices, sugar and/or coconut flakes. Of course you also can  decorate differently, with colourful icing or chocolate, just as you like.



Heat the oven to 180 degrees Celsius in the convection oven, so you can put in 2 trays at once, and bake for ca. 12 - 15 minutes, they have to become lightly brown. (Check in between!)

Thanks, Mum, for this sweet idea and recipe! Just one question: is it really 180 Fahrenheit, not Celsius? 180 F would mean only about 82 Celsius, and that seems a little low for baking.
I am very much looking forward to tasting the bunny cookies next time I'll be at my parents' (which will be tomorrow night after work).

  3. They look very tempting. And cute! I have lots of different cookie cutters for Christmas ginger bread biscuits - heart, leaf, flower, pig, goat, man, woman, angel, Christmas tree, and even horse... but I've never seen any bunny-shaped ones. Or chicken or egg-shaped, for that matter. I've never really thought about it before, but I guess we just haven't got the tradition here in Sweden to bake "shaped" cookies for Easter(?)

    1. Here, in every bakery they have been selling bunny-shaped cookies for several weeks already. None that are chicken- or egg-shaped, come to think of it.
      My Mum and one of our closest family friends have dozens of cookie cutters in all imaginable shapes. Some don't work well because they are too delicate, and the tiny bits (such as a cat's tail or the spikes on a crown) will nearly always break off after baking or just not look very nice once the dough rises or spreads in the oven.

  5. I just need some grandchildren to make these for although I'm not sure if I would find a bunny cookie cutter easily in the UK.

    1. I never thought of cookie cutters (or at least the huge variety of them) being something typical German, but now that you mention it, I can not remember having seen any in shops in England (although of course I have never actively looked for them while on holiday).

    GB- They have a set of animal cookie cutters in Hobbycraft, one of which is a rabbit. :)

    1. I don't think I have come across a Hobbycraft shop when in England - and probably would not have gone in, since when I am on holiday, the shops I usually visit sell clothes, books, or food :-)

  9. for Meike's Mum (and Meike) - those cookies! We made those cookies, my Giac and I, and he put the eyes in, and added Easter sprinkles (tiny, tiny coloured bunnies and chicks).
